I had 6 sweet potato fries in my CSA pick up this month. I knew I was going to use them up for Thanksgiving but I wasn’t sure how. I came across this recipe a few days before the holiday and just knew I had to try it.
Here is the summary
Preheat oven to 400 degrees.
Cut fries to the size and length you like.
Season them with the spice blend (see recipe link).
Lay them flat on parchment paper.
Turn fries once half way through the cooking cycle. I only had to bake mine for 35 minutes since I cut the fries thin.
While the fries are baking, you can make the Aioli using the following ingredients
- 1/2 cup Mayonnaise
- 1/2 cup Greek Yogurt (makes the Aioli slightly healthier since it is low in fat and high in protein)
- 1 tspn curry powder
- 1 tspn garlic powder
- 1/2 tspn cayenne pepper
- 1/2 tspn cilantro leaves
- dash of salt & pepper
Just combine all ingredients in a bowl
Serve it up with you fries.

These are great to serve at a party or enjoy at home. They’re a guilt free treat since you baked them. Sweet potatoes are a great source of fiber, Vitamin B6, beta-carotene, manganese, Vitamins C & E.

Let me know how the fries turn out for ya… they aren’t very crispy unless you use a pizza stone or fry them but taste delicious nonetheless.
